Black cherry yogurt panna cotta with shortbread
Panna cotta is weeknight luxury: yogurt, cream, and gelatin thicken into something silky and elegant, while shortbread bakes. The cherry flavor runs through both, making this one shelf and one trip feel refined.

- 1 packet [2.25 teaspoons] unflavored gelatin

- 7 oz [200 grams] black cherry yogurt, Chobani

- 3 tablespoons [43 grams] butter
- 1/2 cup [60 grams] flour
- 1/4 teaspoon salt
- 2 tablespoons [25 grams] sugar
- Make shortbread first: mix 1/2 cup flour, 2 tablespoons sugar, and 1/4 teaspoon salt in a bowl, then work in 3 tablespoons cold butter with your fingers until it looks like coarse meal. Pack into a 2-inch square of parchment and chill while you make the panna cotta.
- Bloom 1 packet gelatin in 3 tablespoons cold water for 5 minutes, then set the bowl over a pot of simmering water and stir until the gelatin dissolves, about 1 minute. Stir in 3/4 cup heavy cream, heating gently but do not boil.
- Pour the warm cream into a blender with 7 oz yogurt and blend until smooth, about 30 seconds. Divide between two glasses or small bowls and chill for 20 minutes while the shortbread bakes.
- Roll out the shortbread between two pieces of parchment to 1/8 inch thick and prick all over with a fork. Slide onto a baking sheet and bake at 325°F [163°C] for 12 to 15 minutes, until golden at the edges.
- Cool the shortbread on the baking sheet for 2 minutes, then break into shards and dust lightly with salt if you like. Serve alongside or tucked into the panna cotta.
Note Swap the yogurt for plain if you have it, adding a touch of almond extract and 2 tablespoons cherry jam to the warm cream instead. Panna cotta keeps in the fridge for 3 days; shortbread for 4 in an airtight tin. Serve with more yogurt or whipped cream on the side if you want richness.
