Cheese and herb open-faced muffins

Split and toast the sourdough muffins, then top with melted cheese and herbs for a satisfying dinner that comes together in minutes. The tangy muffins pair well with a sharp cheddar and fresh garlic, making this feel more substantial than breakfast.

  • 4 ounces sharp cheddar cheese
  • small handful fresh thyme or parsley

  • 1 tablespoon butter
  • 1 clove garlic
  • 1 pinch salt
  • 1 pinch pepper

  1. Split the two sourdough muffins in half and arrange them split-side up on a baking sheet or toaster oven tray.
  2. Preheat your oven to 425°F [220°C] while you mince 1 clove of garlic and shred 4 ounces of cheddar cheese.
  3. Rub 1 tablespoon of butter over the cut sides of the four muffin halves, then divide the shredded cheese evenly among them and scatter the minced garlic over each.
  4. Toast in the oven for 5 to 7 minutes, until the cheese melts and begins to brown at the edges.
  5. Remove from the oven and scatter a small handful of fresh thyme or parsley over the top, then season with a pinch of salt and pepper to taste.

Note Swap cheddar for gruyere or fontina if you prefer. Leftovers keep for two days covered in the fridge and reheat well under the broiler. Serve alongside a simple green salad or with a bowl of tomato soup for dipping.
