Turmeric chicken broth with shredded chicken

This homestyle stock carries enough turmeric and rendered fat to become a silky, warming broth on its own. Shred the rotisserie chicken and let it heat through in the gentle stock for a weeknight supper that tastes like it took hours.

You need

From your shelf

  • 32 oz homestyle chicken stock
  • 1 whole rotisserie chicken

Staples

  • to taste salt
  • to taste pepper

  1. Pour 32 oz of stock into a pot and bring to a low simmer over medium heat. Shred the rotisserie chicken with two forks, discarding skin and bones, and set aside.
  2. Add the shredded chicken to the simmering stock and stir to combine. Let it heat through for two minutes until the chicken warms and the broth smells rich and unified.
  3. Taste the broth and season with salt and pepper as needed; the stock is already salted, so go easy.

Note For a heartier bowl, stir in a handful of cooked rice or pasta, or serve the broth over toasted bread. Leftovers keep three days covered in the fridge. Pair with a simple salad or steamed greens on the side.
