Cottage cheese with peaches and crisp toast

Cottage cheese with peaches is a quick supper when you want something mild and cool. The fruit is already sweetened, so all you do is toast some bread, butter it, and spoon the cottage cheese on top for a light dinner.

Serves 2. 8 minutes, 5 at the stove.

  • one 15-ounce container cottage cheese with peaches

Staples

  • 1 tablespoon butter
  • pinch salt

  1. Toast 4 slices of bread in a toaster or under the broiler until golden and crisp, watching so they do not burn.
  2. Spread 1 tablespoon of butter evenly across the hot toast while it is still warm.
  3. Divide the container of cottage cheese with peaches between two plates and place 2 slices of buttered toast alongside on each plate. Sprinkle a small pinch of salt over the cottage cheese and serve.

Note Swap regular cottage cheese for the peach version if you want to add your own fresh or canned fruit. Leftovers keep three days in the refrigerator. Serve with a glass of cold milk or sparkling water, or add fresh berries alongside.
