Lemon parmesan sheet pan potatoes and broccoli

The kit does most of the seasoning work for you, turning red potatoes, broccoli, and carrots into something bright and sharp in one pan. A quick dinner when you want the oven to do the cooking while you rest.

Serves 2. 35 minutes, 5 at the stove.

  • 1 lemon parmesan sheet pan meal starter kit

Staples

  • 2 tablespoons oil

  1. Heat the oven to 425°F [220°C]. Pour 2 tablespoons of oil onto a sheet pan and tilt to coat evenly.
  2. Empty the kit onto the oiled pan and toss everything together until the vegetables are coated and the seasoning is distributed throughout, about one minute. Spread in a single layer.
  3. Roast for 25 to 30 minutes, stirring halfway through, until the potatoes are tender when pierced with a knife and the broccoli edges are lightly browned.

Note Swap in cauliflower for broccoli if you prefer. Leftovers keep in the fridge for three days; reheat gently in a low oven or eat cold in a salad. Serve with a simple green salad or crusty bread.
