Creamed eggs and toast

A creamed egg scramble on buttered toast makes supper from almost nothing. This shelf holds half and half, which turns eggs silky and rich. It is done in twenty minutes.

Serves 2. 20 minutes, 20 at the stove.

  • 4 slices bread

  • 1 cup [240 ml] half and half

  • 3 tablespoons [42 g] butter
  • 6 eggs
  • to taste salt
  • to taste pepper

  1. Toast four slices of bread until golden, then butter them generously with 1 tablespoon butter and set on two plates.
  2. Crack six eggs into a bowl, add one-half cup half and half, one-quarter teaspoon salt, and a few grinds of pepper, then whisk until combined.
  3. Set a non-stick skillet over medium heat and add two tablespoons butter; when it foams and quiets, pour in the egg mixture and stir gently with a rubber spatula, scraping the bottom and sides as they set.
  4. When the eggs are soft and creamy, about four minutes, they are done; taste and adjust seasoning.
  5. Spoon the creamed eggs over the buttered toast and serve at once.

Note Swap soft scrambled eggs for any vegetable egg dish; stir in chopped fresh herbs or cooked mushrooms if you have them. Leftovers do not keep well. Serve with a green salad or sliced tomatoes, or a glass of wine.
