Sausage and cheddar biscuit skillet

A supper built from the biscuits in your freezer. Split them, layer them with sausage and melted cheese in a hot skillet, and let the bottoms toast while the cheese softens. Dinner in under twenty minutes.

Serves 2. 18 minutes, 10 at the stove.

  • 4 ounces bulk pork sausage
  • 2 ounces sharp cheddar cheese

  • 4 homestyle flaky jumbo biscuits

Staples

  • 1 tablespoon butter
  • to taste salt
  • to taste pepper

  1. Heat 1 tablespoon butter in a large skillet over medium-high heat. Crumble 4 ounces sausage into the pan and cook, stirring occasionally, until browned, about 5 minutes.
  2. While the sausage cooks, split the 4 biscuits in half horizontally and shred 2 ounces cheddar cheese.
  3. Divide the cooked sausage between the 8 biscuit halves, then layer them back into pairs, sausage side in, and arrange seam side down in the skillet with the sausage. Top each with a pinch of salt and pepper, then a handful of shredded cheese.
  4. Lower the heat to medium and cook until the bottoms are golden brown and crisp, 6 to 8 minutes. The cheese will melt and hold everything together.

Note Swap bulk sausage for diced ham or smoked turkey. Leftovers keep two days wrapped and reheat gently in a skillet. Serve with hot sauce or gravy on the side, or a simple salad dressed with vinaigrette.
