Heated burrito bowl with cilantro and lime

  1. Heat the burrito bowl in a microwave for the time the label recommends, usually about eight minutes, stirring halfway through. While it heats, roughly chop enough cilantro to give you two tablespoons, and cut the lime into two wedges.
  2. Divide the heated bowl between two plates. Squeeze half the lime juice over each portion, scatter the cilantro across both, and finish with a pinch of salt and pepper to your taste.

Note Swap the lime for hot sauce if you have it; a squeeze of hot sauce works just as well. Leftovers keep for three days in the fridge and reheat in a covered bowl in the microwave. Serve with crumbled feta cheese or a dollop of sour cream if you want to stretch it.
