Warmed mango edamame power bowl

This bowl is ready to eat from the package, but warming it in a skillet brings out the grain texture and lets the vinaigrette coat everything. Two minutes of hands-on work makes dinner for tired people who need vegetables and protein.

Serves 2. 12 minutes, 2 at the stove.

  • 1 package mango edamame power bowl

Staples

  • to taste salt
  • to taste pepper

  1. Empty the power bowl into a large skillet and set over medium-high heat. Stir every minute or so, and when the grains have warmed through and begun to stick lightly to the pan, about 10 minutes, taste and adjust salt and pepper.
  2. Divide between two bowls and serve at once.

Note If the bowl feels dry as it warms, splash in a tablespoon of water and stir. Leftovers keep three days covered in the fridge and warm well in a skillet. Serve with a hard cider or light beer, or alone.
