Scallion ginger grain bowl with egg

This shelf product is a complete bowl that needs only a fried egg and a squeeze of lime to become dinner. The rice, vegetables, and nuts are already balanced and sauced; a warm egg yolk breaks over the top and pulls everything together with its richness.

  • 2 eggs
  • to taste salt
  • to taste pepper

  1. Heat 2 tablespoons oil in a skillet over medium-high heat. Crack 2 eggs into the pan and fry until the whites set but the yolks stay runny, about three minutes.
  2. While the eggs cook, heat the 2 grain bowls in the microwave according to package directions, about two minutes.
  3. Divide the hot grain between two bowls. Top each with one fried egg, a pinch of salt and pepper, and a squeeze of fresh lime juice.

Note Swap the egg for sliced avocado if you prefer. The bowls keep covered in the refrigerator for two days and reheat gently in the microwave. Serve with a cold beer or sparkling water and extra lime on the side.
