Sausage and potato sheet pan supper

  • 1 pound russet or yellow potatoes
  • 1 medium yellow onion

Staples

  • 2 tablespoons oil
  • to taste salt
  • to taste pepper
  • 2 cloves, minced garlic

  1. Heat your oven to 425°F [220°C]. Chop 1 pound of potatoes into three-quarter-inch pieces and slice 1 medium onion into wedges. Toss both with 2 tablespoons oil, 2 minced garlic cloves, salt, and pepper on a sheet pan, then spread in an even layer and roast for 15 minutes while you wait.
  2. Nestle 5 sausage links among the potatoes and onions, then return the pan to the oven for 15 minutes more, until the potatoes are tender and golden and the sausages are heated through.
  3. Divide between two plates and serve at once.

Note Swap in bell peppers or mushrooms for the onion if you have them. Leftovers keep refrigerated for three days and reheat well. Serve with a sharp mustard or horseradish sauce alongside, or with a simple green salad to cut the richness.
