Sausage and white bean skillet

  • one 15-ounce can canned white beans
  • 4 ounces fresh spinach or kale

  • 1 package Hillshire Farm Italian style beef smoked sausage, Angus

  • 1 tablespoon oil
  • 2 cloves garlic
  • to taste salt

  1. Slice one package of Hillshire Farm sausage into half-inch rounds. Heat 1 tablespoon oil in a large skillet over medium-high heat and add the sausage; cook until the edges brown and it releases its fat, about 4 minutes, stirring once.
  2. Mince 2 garlic cloves and add them to the pan; stir and cook for 30 seconds until fragrant.
  3. Drain one 15-ounce can of white beans and add them to the sausage; stir to coat. Cook for 2 minutes to warm through while the pan settles.
  4. Add 4 ounces of fresh spinach or kale, pushing it down into the pan as it wilts. Season with salt and pepper to taste and cook for 1 minute until the greens are tender.

Note Swap the greens for kale if spinach is not at hand, or skip them if you have neither. Leftovers keep three days covered in the fridge and reheat well in a skillet. Serve with bread to soak up the pan juices, or over rice or polenta to stretch it.
