Open-faced turkey sandwich with mustard butter

Smoked turkey sliced thin and piled warm on toasted bread with a sharp mustard butter—this is the easiest dinner when you need something in minutes. The smoke and salt in the meat mean you taste good food without fussing.

  • 4 slices bread (white, wheat, or rye)
  • 2 tablespoons whole grain mustard

Staples

  • 2 tablespoons butter
  • pinch salt
  • pinch pepper

  1. Toast four slices of bread until golden and crisp.
  2. Mash 2 tablespoons of butter with 2 tablespoons of whole grain mustard, a pinch of salt, and a pinch of pepper until smooth.
  3. Spread the mustard butter on each warm slice of toast. Pile the turkey breast on top and eat open-faced with a knife and fork.

Note Swap the mustard for horseradish cream if you have it, or skip it and use mayonnaise and a slice of tomato. Leftovers keep three days in an airtight container. Serve with a green salad or pickles on the side, or stretch it by adding a cup of turkey broth to make a quick soup.
