Crisp wraps with spinach and bacon

These breakfast wraps get a second life as a quick dinner. Crisping them in a hot pan renders the bacon and toasts the tortilla into something closer to a taco shell, then fill them with a simple scramble of eggs and greens.

Serves 2. 20 minutes, 18 at the stove.

  • 4 spinach & bacon breakfast wraps

Staples

  • 2 tablespoons oil
  • 4 eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon butter

  1. Heat 1 tablespoon oil in a skillet over medium-high heat. Place two wraps into the pan and let them crisp on each side until golden and the bacon is browned, about three minutes per side, then set them on a plate and repeat with the remaining oil and two wraps.
  2. Add 1 tablespoon butter to the same skillet and crack four eggs into it with a pinch each of salt and pepper, stirring gently as they set, until soft curds form and the eggs are no longer wet, about three minutes.
  3. Divide the eggs between the four wraps and serve at once while the tortillas are still warm.

Note Swap the eggs for shredded cheese if preferred. Wrapped and chilled, these keep for a day and taste best at room temperature with a squeeze of hot sauce. Serve with sliced tomato or salsa on the side.
