Breakfast sausage with crispy toast and eggs

Cook the sausages until caramelized, then use the fat left behind to fry eggs and toast bread. The French toast bread crisps beautifully on its own when there is rendered sausage fat in the pan.

  • 8 oz [225 g] breakfast sausage
  • 4 slices French toast

  • 1 tablespoon butter
  • 1 pinch salt
  • 1 pinch pepper

  1. Heat a large skillet over medium-high heat. Once hot, break the sausage into rough chunks as you add it to the pan, stirring occasionally as it browns, until deeply caramelized and cooked through, about 10 minutes. Transfer to a plate, leaving the fat behind.
  2. Add 1 tablespoon butter to the fat still in the pan. Crack 2 eggs into the pan and season with 1 pinch of salt and 1 pinch of pepper. Fry to your taste, then move to a plate.
  3. Return the pan to medium-high heat and lay the 4 slices of French toast in the fat, pressing gently, until golden and crisp on one side, about 2 minutes; flip and crisp the other side, about another 2 minutes. Plate with the sausage and eggs.

Note For two, this is a dinner that feels like breakfast: hearty and quick. Leftovers reheat poorly; eat fresh. Serve with hot sauce or maple syrup on the side, or simply with coffee. You might also set out a simple green salad on the plate to make it lean toward supper.
