Cheese on toast with tomato and onion

Melted cheese on thick toast with a quick tomato and onion compote. The single slices turn glossy and soft over heat, better than you'd expect. Build it while the pan gets hot, dinner in fifteen minutes.

  • 1 cup [240 ml] canned crushed tomatoes

  • 4 slices Kraft skim milk American singles cheese slices

  • 1 tablespoon butter
  • 1 small onion
  • to taste salt
  • to taste pepper
  • 2 thick slices bread

  1. Melt 1 tablespoon butter in a skillet over medium-high heat. Dice one small onion and add it to the pan, stirring until softened and beginning to brown, about four minutes. Stir in 1 cup crushed tomatoes, salt, and pepper, and let the sauce bubble gently.
  2. While the sauce cooks, toast 2 thick slices of bread until they have color underneath but are still soft on top. Lay two cheese slices on each slice of toast so they touch the warm surface, then place the toasts in the empty part of the skillet, away from the sauce.
  3. Cover the skillet and let the heat melt the cheese completely, about two minutes. You will see the slices turn glossy. Spoon the warm tomato and onion compote over the melted cheese and serve right away.

Note Swap canned tomatoes for half a cup of tomato paste thinned with water. Leftovers keep one day covered; reheat gently. Serve with a simple green salad or celery sticks, or make it stretch by adding more toast.
