Lime chili shrimp ramen with egg and bok choy

A Maruchan ramen packet becomes dinner when you crack an egg into the broth and wilt bok choy in the noodles, turning a pantry staple into something closer to a real bowl. This shelf gives you everything you need for a warm weeknight supper.

  • 1 bunch scallions

  • 1 package Lime chili shrimp flavor ramen noodle soup, Maruchan

  • 2 cups water
  • 1 tablespoon butter
  • to taste salt
  • to taste pepper
  • 2 eggs

  1. Bring 2 cups of water to a boil in a pot. Crumble the noodles from the Maruchan package into the water and stir to separate them, then add the flavor packet.
  2. While the noodles cook, tear 1 small head of bok choy into leaves and slice 2 scallions on the bias. Crack 2 eggs into a small bowl.
  3. When the noodles soften after about 3 minutes, add the bok choy leaves and stir gently. Pour the beaten eggs in a thin stream into the simmering broth, stirring constantly until they set into ribbons, then add 1 tablespoon of butter.
  4. Taste the broth and adjust salt and pepper as needed. Divide the noodles and broth between two bowls and top with the sliced scallions.

Note Swap the bok choy for spinach, kale, or frozen peas if needed. Leftovers keep two days refrigerated but taste best eaten right away. Serve with a slice of lime and hot sauce on the side.
