Hawaiian bread and egg breakfast for dinner

  1. Heat 1 tablespoon of butter in a skillet over medium heat. Lay 4 slices of Hawaiian bread in the pan and toast until golden and crisp on one side, about 2 to 3 minutes, then flip and toast the other side for 1 to 2 minutes until it too is golden.
  2. Transfer the toasted bread to a plate and set aside. Add the remaining 1 tablespoon of butter to the skillet and crack 2 eggs into it. Cook the eggs to your liking, basting the yolks with the melted butter so they cook gently while the whites set, about 3 to 4 minutes for soft yolks.
  3. Divide the toasted Hawaiian bread between two plates. Tear 2 ounces of sharp cheddar cheese into pieces and scatter over each slice. Top two slices with one fried egg each, season with salt and pepper, and serve at once.

Note Swap the cheddar for any cheese you have on hand, or omit it and pile the toast with avocado and hot sauce instead. Leftovers do not keep well; best eaten hot. Serve with a simple green salad or a handful of baby spinach wilted in the warm skillet after the eggs come out.
