Warm pesto quinoa with roasted tomatoes

A pesto quinoa cup becomes dinner with roasted cherry tomatoes and a simple green salad. The quinoa is already cooked and seasoned, so you're really just warming it through and adding fresh contrast. Minimal effort for a balanced plate.

  • 8 ounces cherry tomatoes
  • 4 ounces mixed greens

Staples

  • 2 tablespoons oil
  • to taste salt

  1. Heat the oven to 425°F [220°C]. Halve 8 ounces of cherry tomatoes, toss them in a bowl with 1 tablespoon of oil, salt, and pepper, then spread on a baking sheet in a single layer.
  2. Roast the tomatoes for 12 to 15 minutes while you assemble a salad. Toss 4 ounces of mixed greens with 1 tablespoon of oil, salt, and pepper in a bowl.
  3. Empty the pesto quinoa cup into a small saucepan or skillet and warm gently over medium heat for 2 to 3 minutes, stirring occasionally, until heated through.
  4. Divide the warm quinoa between two bowls, top each with half the roasted tomatoes and any pan juices, and serve the salad on the side or tucked alongside.

Note Swap the tomatoes for roasted zucchini or bell peppers if you prefer. Leftovers keep refrigerated for two days and are good cold or reheated gently. Serve with crusty bread to soak up the tomato juices and pesto.
