Sheet pan chicken with creamy jalapeño sauce

  1. Heat your oven to 425°F [220°C]. Pat 1 pound of chicken thighs dry and toss them with 1 tablespoon of oil, salt, and pepper on a sheet pan, skin side up.
  2. Roast until the skin browns and the thighs reach 165°F [74°C] at the thickest part, about 25 minutes.
  3. Pour the contents of the Old El Paso pouch over the hot chicken and return the pan to the oven for 3 more minutes, until the sauce bubbles.

Note Swap chicken breasts if you prefer leaner meat, though thighs stay juicier. Leftovers keep three days refrigerated; reheat gently. Serve with rice or warm tortillas to catch the sauce.
