Cheese tortilla bowls with chorizo and beans

These crispy edible bowls come ready-made in a box, so you fill them with seasoned chorizo, black beans, and greens for a quick weeknight supper that tastes like you tried harder than you did.

  • 2 tablespoons oil
  • to taste salt

  • 2 cloves garlic
  • 1 teaspoon cumin

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat and crumble 6 ounces chorizo into the pan, breaking it apart as it cooks until it browns, about 5 minutes.
  2. Stir in 2 minced garlic cloves, 1 teaspoon cumin, salt, and pepper, then add one drained 15-ounce can of black beans and stir until warm, about 2 minutes.
  3. Warm the 4 cheese tortilla bowls according to package directions while the filling cooks, then divide the chorizo and bean mixture among the bowls and serve at once.

Note Swap chorizo for ground beef or turkey if you prefer. Leftovers keep for two days in the fridge; reheat gently. Serve with lime wedges, hot sauce, and a green salad to stretch the bowls.
