Old El Paso nachos with beer and lime

These frozen stuffed nachos want hot oil and a cold drink. They're dinner as is, but a squeeze of lime and a beer transform them into something closer to the real thing. Twenty minutes from freezer to table.

  • 2 cups oil

  1. Heat 2 cups oil in a shallow pan to 350°F [175°C]. While it comes to temperature, set out a plate lined with paper towels and cut the lime into wedges.
  2. Working in batches so they're not crowded, add 20 pieces of the frozen stuffed nachos to the hot oil. Fry until they float and the edges brown, about 3 minutes. Transfer to the paper towels with a slotted spoon.
  3. Divide the nachos between two bowls. Squeeze lime over each bowl and serve at once with a cold beer.

Note Serve with sour cream, jalapeños, or salsa if you have them. Leftover fried nachos keep in an airtight container for two days; reheat in a 350°F [175°C] oven until crisp. Use the remaining nachos another night the same way.
