Sesame bun pizza with eggs and cheese

Split and toast hamburger buns to make quick pizza bases, topped with cheese, eggs, and a handful of pantry staples. The sesame brings a nutty note that lifts an ordinary weeknight dinner. Dinner is ready in twenty-five minutes.

  • 1 cup [110 grams] mozzarella cheese, shredded
  • 1/2 cup [120 milliliters] tomato sauce

Staples

  • 1 tablespoon butter
  • 2 tablespoons oil
  • 1 clove garlic
  • to taste salt
  • to taste pepper
  • 4 eggs
  • 1 small onion

  1. Heat your oven to 400°F [200°C]. Split all four buns horizontally and arrange them cut-side up on a baking sheet. Toast them in the oven until the cut sides are golden, about five minutes.
  2. While the buns toast, mince one small onion and one clove of garlic. Heat two tablespoons oil in a skillet over medium-high heat, then cook the onion and garlic until soft, stirring often, about three minutes.
  3. Spread one tablespoon tomato sauce on each toasted bun half, then scatter a quarter of the mozzarella on each. Return them to the oven until the cheese melts, about four minutes.
  4. Meanwhile, melt one tablespoon butter in the skillet with the onion and garlic still in it. Crack four eggs into the pan, sprinkle with salt and pepper, and cook until the whites set but the yolks stay runny, about four minutes, tilting the pan to cook the edges.
  5. Remove the bun pizzas from the oven. Top each one with an egg or split it between two, then finish with a pinch of salt and pepper and serve hot.

Note Swap the eggs for cooked sausage or ground beef if you prefer. Leftovers keep covered in the fridge for two days and reheat in a 350°F [175°C] oven. Serve with a side salad or sliced tomatoes.
