Buttered peas with garlic and shallots

The steamable pack of sweet peas becomes a side dish that tastes like you spent time on it. A handful of aromatics and butter transform frozen peas into something that justifies its own plate, and it comes together while you make something else.

Staples

  • 2 tablespoons butter
  • 2 cloves garlic
  • 2 tablespoons minced onion
  • to taste salt
  • to taste pepper

  1. Mince 2 cloves garlic and 1 small shallot. Melt 2 tablespoons butter in a skillet over medium heat and cook the garlic and shallot until fragrant, about 2 minutes.
  2. Steam the bag of peas according to package directions, about 5 minutes, while the aromatics cook.
  3. Pour the hot peas into the skillet with the butter and aromatics, tossing to coat. Season with salt and pepper to taste and serve warm.

Note Swap shallot for 2 tablespoons minced onion if you have it. Leftovers keep in the fridge for three days and reheat gently in a skillet. Serve alongside roasted chicken, fish, or steak, or spoon over rice.
