Shrimp in mango habanero salsa

Sweet and spicy salsa cooks down with quick-cooking shrimp into a dinner that needs only rice on the side. The mango brings roundness to the heat, and everything comes together in less than twenty minutes.

Serves 2. 18 minutes, 15 at the stove.

  • 1 jar mango habanero chunky Texas salsa, hot & sweet (Pace)

Staples

  • 1 tablespoon oil
  • to taste salt
  • to taste pepper
  • 2 cloves garlic

  1. Heat 1 tablespoon oil in a wide pan over medium-high heat. Mince 2 cloves garlic and add to the oil, stirring until fragrant, about thirty seconds.
  2. Pour the entire jar of salsa into the pan and bring to a simmer. The salsa will bubble gently as it starts to concentrate, about 2 minutes.
  3. Pat dry 12 ounces shrimp and add them to the pan, stirring to coat with salsa. Cook until the shrimp are opaque throughout, 4 to 5 minutes, stirring once halfway through.
  4. Taste and adjust seasoning with salt and pepper as needed. The shrimp are done when they no longer bend and feel firm when pressed.

Note Swap shrimp for flaked fish or firm tofu. Leftovers keep refrigerated for two days and reheat gently. Serve over rice, with lime wedges and cilantro on the side to let each diner adjust the brightness.
