What to do with the last of the mango

Overripe mango works well in smoothies, lassis, or ice cream. Browning flesh is still fine blended into these dishes.

Ripe mango keeps in the fridge for 3 to 5 days. Cut mango, covered in the fridge, lasts 3 to 4 days.
How to tell it has turned
Soft spots and dark patches mean it's overripe and starting to ferment. A vinegary smell is a sign to discard it.

Half a mango

Mango chicken with lime and garlic

Half a mango becomes a quick, tangy sauce for chicken breast. The fruit breaks down into a glaze that's savory and bright, the kind of dish that feels more special than the effort it takes.

  1. Cut the half mango into chunks, removing the skin and pit. Mince the 3 garlic cloves. Cut the 2 chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat 2 tablespoons oil in a large pan over medium-high heat. Add the chicken and cook until golden on both sides, about 8 minutes total. The chicken should be cooked through at the thickest point.
  3. Push the chicken to the side of the pan. Add the 1 tablespoon butter and the minced garlic to the empty space and cook for about 30 seconds until fragrant, then stir to combine with the chicken.
  4. Add the mango chunks to the pan and cook for 2 to 3 minutes, stirring often, until the mango softens and breaks down into a sauce. Squeeze the juice of the lime over the pan, taste, and add salt and pepper as needed. Serve warm.

Note Swap diced pineapple for the mango if you have it. Leftovers keep in the fridge for two days and reheat gently on the stove. Serve over rice or with a simple green salad to round out the plate.

Mango cheek rice bowl with eggs

A warm rice bowl built on a cheek of mango, charred in the pan until the edges caramelize and the flesh softens into a sauce. The shelf was bare, so we build from staples: rice, an egg, and what aromatics round out the plate. This gets dinner on the table in the time it takes rice to steam.

  1. Start 1 cup of rice in a pot of salted water; bring to a boil, cover, and reduce heat to low. The rice will be ready in about 18 minutes.
  2. While the rice cooks, score the mango cheek in a crosshatch pattern through the flesh but not the skin. Scoop the cubes into a shallow pan with 1 tablespoon of oil over medium-high heat.
  3. Let the mango cook without stirring for 3 minutes, then toss gently until the edges are browned and caramelized, about 2 minutes more. Transfer to a plate.
  4. Return the same pan to medium heat. Add 1 tablespoon of oil and mince 2 cloves of garlic into the pan; cook until fragrant, about 30 seconds, then push to one side.
  5. Crack 2 eggs into the pan and cook to your preference; while they cook, check that the rice is tender and fluff it with a fork.
  6. Divide the rice between two bowls. Top each with an egg, half the mango, and a pinch each of salt and pepper.

Note Swap the mango for stone fruit or thick slices of pineapple; char the same way. Leftover rice keeps three days refrigerated; leftovers of this dish are better cold than reheated. Serve with hot sauce, soy sauce, or lime wedges.

Mango and egg fried rice

This is fried rice built around three slices of mango, cut into chunks and stirred in at the end so they stay soft and bright. The shelf is bare, so we cook from staples and turn rice into dinner in twenty minutes.

  • 1.5 cups cooked rice
  • 2 eggs
  • 1 tablespoon oil
  • 2 cloves garlic
  • 1/4 medium onion
  • to taste salt
  • to taste pepper
  1. Heat 1 tablespoon oil in a large pan or wok over high heat. Crack 2 eggs into a bowl, beat them with a pinch of salt and pepper, then pour into the hot pan and scramble until just set, about one minute. Push the eggs to the side and transfer to a plate.
  2. Add 1 tablespoon oil to the same pan if needed, then add 2 minced cloves garlic and 1/4 diced medium onion and stir for thirty seconds until fragrant.
  3. Add 1.5 cups cooked rice broken into grains and stir until heated through and any clumps break up, about three minutes. Taste and add salt and pepper as needed.
  4. Cut 3 slices mango into chunks and fold them into the rice along with the scrambled eggs. Stir gently once to warm through, about one minute, then divide between two bowls.
