Pork chops with mango peach salsa

Quick-cooked pork chops get a bright finish from the salsa already in your cupboard, which brings tropical fruit and gentle heat to simple meat. The salsa does the flavoring work, so you can have supper ready in thirty minutes.

  • 1 cup [240 ml] mild mango & peach salsa

Staples

  • 2 tablespoons oil
  • 1 tablespoon butter

  1. Pat two 1-inch-thick pork chops dry and season both sides with salt and pepper. Heat 2 tablespoons oil in a skillet over medium-high until shimmering.
  2. Lay the pork chops in the pan and cook for 4 to 5 minutes on the first side until golden. Flip and cook for 3 to 4 minutes more until cooked through, then transfer to a plate.
  3. Pour off excess fat from the skillet, then add 1 tablespoon butter and 1 cup of the salsa. Stir and warm through for 1 to 2 minutes until slightly thickened, scraping up any browned bits from the pan.
  4. Return the pork chops to the skillet and spoon the salsa over them to coat. Simmer for 1 minute and serve right away.

Note Swap chicken breast halves for pork if you prefer; cook them a minute longer on the first side. Leftovers keep three days in the fridge and are good cold or reheated gently. Serve with white rice or corn tortillas to catch the salsa.
