Banana Walnut Muffin Bread Pudding

These muffins transform into a warm, custard-soaked dessert that passes for dinner when time is short and the shelf is spare. Crumbled into a pan with eggs and milk, they become something closer to cake than pudding, sweeter than savory but honest work for a tired night.

Serves 2. 35 minutes, 10 at the stove.

  • 2 large eggs

  1. Heat the oven to 350°F [175°C]. Butter a small baking dish, about eight inches square.
  2. Crumble four muffins into rough pieces and scatter them in the buttered dish. In a bowl, whisk together two large eggs, one cup whole milk, and a pinch of salt until the mixture is smooth.
  3. Pour the custard over the muffin pieces and let them sit for two minutes to absorb some liquid, then stir gently so the crumbs are half submerged. Dot the top with two teaspoons butter in small pieces.
  4. Bake until the custard is set at the edges but still moves slightly in the center, about twenty minutes. The pudding will firm up as it cools.

Note Swap the milk for half-and-half or light cream for richness. The pudding keeps covered in the fridge for two days; warm it gently before serving. Serve with yogurt or a small scoop of vanilla ice cream on the side to stretch it further.
