Red eye gravy grits with eggs

These instant grits come with ham and gravy flavoring baked in, so all you need is an egg on top to make a full supper. The salty, rich packet turns boring grits into something that tastes like it took all morning. Comfort food for a tired night.

Serves 2. 15 minutes, 10 at the stove.

  • 1 packet (1 ounce) Quaker instant grits red eye gravy & country ham

Staples

  • 1 tablespoon butter
  • 2 eggs
  • pinch salt
  • pinch pepper

  1. Bring 1 cup of water to a boil in a small pot. Stir in 1 packet of the instant grits and reduce heat to low. Cook stirring often until thick, about 3 minutes, until the grits pull away from the sides of the pot when you run your spoon through them.
  2. While the grits finish, melt 1 tablespoon butter in a skillet over medium heat. Crack 2 eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3 minutes.
  3. Divide the grits between two bowls and top each with 1 fried egg. Season with a pinch of salt and pepper. Serve at once.

Note Swap in a fried ham slice if you have one. Leftover grits will keep three days in the fridge, reheated in the microwave with a splash of water. Serve with hot sauce or a toasted biscuit on the side.
