Maple oatmeal savory bowl

The maple and brown sugar oatmeal makes a quick base for a savory supper when you cook it in broth instead of water and top it with an egg and greens. This shelf alone can feed two.

Serves 2. 20 minutes, 10 at the stove.

  • 2 cups chicken broth
  • 2 handfuls handful of spinach or other greens

  • 2 packets Quaker instant oatmeal maple and brown sugar

  • 2 eggs

  1. Bring 2 cups of chicken broth to a boil in a medium pot. Stir in both oatmeal packets and cook for 1 minute, stirring often, until the mixture thickens. Season with salt and pepper to taste and divide between two bowls.
  2. While the oatmeal cooks, set 1 tablespoon of butter in a small skillet over medium-high heat. Crack 2 eggs into the pan and cook until the whites set and the yolks stay runny, about 3 minutes, sliding off onto a plate when done.
  3. Wilt a handful of spinach into each bowl of oatmeal by stirring it in; if the oatmeal is still very hot, the greens will soften immediately. Top each bowl with one cooked egg and season with salt and pepper.

Note Swap the spinach for any raw greens or sautéed kale. Leftovers keep three days in the fridge; reheat gently with a splash of broth and top with a fresh fried egg. Serve with hot sauce or a squeeze of lemon if you have them.
