Oatmeal cookies with raisins and spice

Transform instant oatmeal packets into chewy cookies with the raisins and spices already built in. These bake fast and need nothing but butter, eggs, and flour from your staples to go from pantry to plate in under thirty minutes.

Serves 2. 25 minutes, 10 at the stove.

  • 3 packets (4.53 ounces) Quaker raisins & spice instant oatmeal

Staples

  • 4 tablespoons butter
  • 1 eggs
  • 1/2 cup flour

  1. Heat your oven to 350°F (175°C). Tear open three oatmeal packets and pour the contents into a bowl. Melt 4 tablespoons of butter and stir it into the oats with one beaten egg and 1/2 cup of flour until the mixture holds together.
  2. Drop twelve walnut-sized spoonfuls onto a sheet pan, spacing them a couple of inches apart. Bake until the edges set but the centers still yield slightly to pressure, about 12 minutes.
  3. Cool for a minute on the pan, then transfer to a plate to finish setting. They will firm up as they cool.

Note Swap the eggs for 2 tablespoons of water if you prefer. Cookies keep in an airtight tin for three days. Serve warm with tea or coffee, or crumble one over a bowl of yogurt at breakfast.
