Butternut squash soup with sage and crisp bread

A good soup needs little help when it starts this good. Toast bread with garlic and oil, float it on hot broth, and the weeknight dinner comes together in the time it takes to set the table. This shelf does the work.

  • 4 leaves fresh sage

  • 1 jar (32 oz) Rao's butternut squash slow simmered soup

Staples

  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 tablespoon butter
  • to taste salt
  • to taste pepper

  1. Heat 2 tablespoons olive oil in a small skillet over medium-high heat. Mince 2 cloves garlic and add to the pan, stirring until fragrant, about 30 seconds. Slice 4 pieces of bread and place them in the hot oil, turning once, until golden on both sides, 3 to 4 minutes total. Set aside on a plate.
  2. Pour the entire jar of soup into a pot and place over medium heat. Stir in 1 tablespoon butter and 4 sage leaves, torn. Heat until steaming, stirring once, about 5 minutes. Taste and add salt and pepper as needed.
  3. Ladle soup into two bowls. Top each with 2 pieces of toasted bread. Serve at once.

Note Swap fresh sage for 1/4 teaspoon dried sage if needed. Leftover soup keeps refrigerated for four days; reheat gently on the stove with a splash of water. Serve with a sharp green salad or a sandwich alongside to stretch the meal.
