Rao's lentil soup with pasta and greens

This Italian-style soup has the depth of a long braise already built in, so all you do is warm it and turn it into a proper dinner. Stirring in pasta and a handful of greens makes it substantial enough for tonight, with minimal fuss.

Serves 2. 20 minutes, 10 at the stove.

  • 1 jar lentil Italian style slow simmered soup, lentil (Rao's)

Staples

  • 4 ounces pasta
  • to taste salt
  • to taste pepper
  • 1 clove garlic

  1. Put the jar of soup in a pot with 1 cup of water and bring to a simmer over medium heat. While it warms, mince 1 garlic clove and chop 2 large handfuls of kale or spinach. Taste the soup after 5 minutes.
  2. Stir 4 ounces of small pasta directly into the simmering soup. Cook until the pasta is tender, about 8 to 10 minutes, stirring occasionally so it does not stick to the pot.
  3. Stir in the minced garlic and the chopped kale. Cook for 1 minute, then taste and season with salt and pepper. The greens will wilt as you stir.

Note Swap the pasta for rice or skip the starch entirely if you prefer a brothier bowl. Leftovers keep for up to three days in the refrigerator. Serve with crusty bread and a glass of white wine, or add a handful of croutons for texture.
