You need

To buy

  • small handful fresh basil

From your shelf

  • 1 jar Rao's penne alla vodka pasta in creamy tomato vodka sauce

Staples

  • 2 tablespoons oil
  • 4 cloves garlic
  • to taste salt
  • to taste pepper

  1. Heat 2 tablespoons oil in a large pan over medium-high. Slice 4 garlic cloves thin and add them to the oil; stir until the edges turn golden and crisp, about three minutes. Pour the jar of Rao's penne alla vodka into the pan and stir well.
  2. Set a timer for the pasta to finish cooking according to package directions, stirring occasionally. Season with salt and pepper to taste.
  3. Tear a small handful of fresh basil and scatter it over the bowl just before serving.

Note Swap fresh basil for red pepper flakes if you have them. Leftover sauce keeps for three days in the fridge and reheats well. Serve with a bitter green salad and garlic bread, or simply with more Parmesan.
