Rao's sausage and potato soup with garlic bread

Rao's soup is a complete dinner waiting in the pantry, loaded with sausage, beans, and spinach. Warm it gently with fresh garlic and top it with toasted bread for a weeknight meal that tastes like someone spent hours on it.

  • 1 jar [24 oz] sausage and potato soup

Staples

  • 1 tablespoon butter
  • 1 clove garlic
  • pinch salt
  • pinch pepper

  1. Pour the jar of soup into a pot and set it over medium heat while you make the garlic bread. Stir occasionally so nothing catches on the bottom; the soup is done when it steams gently all over, about 8 minutes.
  2. Mince 1 clove garlic and stir it into 1 tablespoon softened butter with a pinch of salt and pepper. Lay 4 slices of bread on a sheet pan and spread each with the garlic butter.
  3. While the soup finishes heating, set the sheet pan under the broiler on high, 3 to 4 inches from the flame, until the bread is golden and the butter sizzles, about 2 minutes.
  4. Ladle the soup into two bowls. Serve with the garlic bread on the side for dunking or crumbling into the bowl.

Note Pair with a bitter green salad if you have one. Leftover soup keeps refrigerated for three days. The bread can be plain or herb-dressed, whatever you have on hand.
