Minestrone with crispy garlic and sage

This shelf soup needs only heat and a few aromatics to become a proper dinner. Raos minestrone is already loaded with vegetables and pasta, so you finish it with browned garlic and sage in hot oil to wake it up, then pour the whole thing into bowls with crusty bread.

Serves 2. 20 minutes, 8 at the stove.

  • 1 can [23.5 oz] vegetable minestrone slow simmered soup

Staples

  • 3 tablespoons olive oil
  • 3 cloves garlic
  • to taste salt
  • to taste pepper

  1. Slice three cloves of garlic thin. Heat three tablespoons of oil in a large pot over medium heat until the oil smells fragrant, about one minute.
  2. Add the sliced garlic and six sage leaves, stirring often until the garlic turns light gold at the edges, two to three minutes. Adjust heat if it browns too fast.
  3. Pour one can of minestrone into the pot and bring it to a bare simmer, stirring once or twice. Let it bubble gently while you ready bowls and bread.
  4. Taste the soup and season with salt and pepper as needed. Ladle into bowls and serve with warm crusty bread alongside.

Note Swap the sage for dried oregano if that is what you have. Leftovers keep refrigerated up to three days; reheat gently on the stove. Serve with grated Parmesan at the table and a green salad to stretch the meal.
