Shrimp salad on bread with Roundy's

A warm shrimp salad bound with mayonnaise, served on toasted bread. This shelf gives you a good olive-oil dressing to build on, so you add shrimp, celery, and lemon to make something supper-quick and satisfying.

Serves 2. 20 minutes, 15 at the stove.

  • 1 pound [455 g] shrimp, peeled and deveined
  • 1 loaf, 4 slices bread, your choice

  • 1/2 cup [120 ml] Roundy's mayonnaise dressing with olive oil

Staples

  • 1 tablespoon [14 g] butter

  1. Heat 1 tablespoon butter in a skillet over medium-high heat. When it foams, add 1 pound shrimp and cook, tossing, until pink and firm, 3 to 4 minutes.
  2. Transfer shrimp to a cutting board, cool slightly, then chop into bite-sized pieces. Return to the skillet and stir in 1/2 cup Roundy's mayonnaise dressing, salt and pepper to taste, and cook just to warm through, about 1 minute.
  3. Toast 4 slices bread until golden. Divide the shrimp salad between two slices and serve open-faced, or make sandwiches with the other two slices.

Note Swap shrimp for canned tuna or white beans if you prefer. Leftovers keep, chilled, for two days; eat cold or warm gently. Serve with a green salad or raw vegetables on the side.
