Hummus Toast with Roasted Vegetables

Caramelized onion hummus makes a substantial dinner when spread thick on toast and topped with roasted vegetables. The shelf does the heavy lifting here, leaving you to roast what's in your crisper and slice bread.

Serves 2. 25 minutes, 10 at the stove.

  • 4 slices thick bread
  • 8 ounces bell peppers or tomatoes

  • 1 cup caramelized onion hummus

  • 2 tablespoons oil
  • to taste salt
  • to taste pepper

  1. Heat your oven to 425°F (220°C). Chop 8 ounces of peppers or tomatoes into bite-sized pieces, toss with 2 tablespoons oil, and spread on a baking sheet. Roast until the edges char, about 12 to 15 minutes.
  2. While the vegetables roast, slice 4 pieces of bread and toast them until golden. Spread 1/4 cup of the caramelized onion hummus on each slice, working it into an even layer.
  3. Top the hummus toast with the roasted vegetables, sprinkle with salt and pepper to taste, and serve while the bread is still warm.

Note Swap the vegetables for what you have: zucchini, mushrooms, or cauliflower all work. Leftover hummus keeps covered in the fridge for two weeks. Serve with a green salad or a simple squeeze of lemon on the side to brighten the rich hummus.
