Hummus and chickpea grain bowl with greens

Caramelized onion hummus becomes a warm sauce for quick grains and greens tonight. The paprika and tangy sweetness suit a bowl format that comes together in thirty minutes, turning shelf hummus into something that tastes like you cooked all day.

Serves 2. 30 minutes, 12 at the stove.

  • 4 cups fresh spinach or chard
  • 1 lemon

  • 1 container [about 10 oz] caramelized onion hummus with smoked paprika

Staples

  • 1 cup rice
  • to taste salt
  • 2 tablespoons oil

  1. Bring 2 cups of water to a boil in a pot with a pinch of salt. Stir in 1 cup of rice, cover, and lower heat to low. Cook for 18 minutes.
  2. While the rice cooks, warm 2 tablespoons of oil in a wide pan over medium heat. Add 4 cups of fresh spinach or chard by the handful, stirring until it wilts, about 3 minutes. Season with salt to taste.
  3. Scoop the entire container of hummus into a small pot and warm over low heat, stirring often, until it loosens and becomes sauce-like, about 4 minutes. Squeeze half a lemon into the warm hummus and stir.
  4. When the rice is tender and water is absorbed, fluff it with a fork. Divide the rice between two bowls. Top each with a mound of wilted greens, then pour half the warm hummus sauce over each bowl. Serve with lemon wedges on the side.

Note Swap in couscous or any grain you have. The hummus and greens keep in separate containers for three days. Serve with a fried egg on top, a handful of nuts, or thick yogurt stirred into the hummus for richness.
