Hummus toast with roasted vegetables

Thick hummus spread on warm toast becomes dinner when topped with roasted vegetables from the pantry. The everything bagel seasoning already builds a savory base, so this is fast and good for nights when you want minimal effort and maximum taste.

Serves 2. 25 minutes, 8 at the stove.

  • 1 loaf rustic bread
  • 1 pint cherry tomatoes

  • 1 container Sabra everything bagel seasoned hummus

Staples

  • 2 tablespoons oil
  • pinch salt
  • pinch pepper
  • 2 cloves garlic
  • 1 small onion

  1. Heat your oven to 425°F (220°C). Cut 1 small onion into thin wedges and halve 1 pint cherry tomatoes. Toss with 2 tablespoons oil, a pinch of salt, and pepper on a sheet pan. Roast until the tomatoes blister and the onion softens, about 15 minutes; stir halfway through.
  2. While the vegetables roast, slice 4 thick pieces of bread and toast until golden. Mince 2 cloves garlic and set aside.
  3. Spread 3 tablespoons hummus on each piece of toast. Top with the roasted vegetables and scattered minced garlic.

Note Swap the cherry tomatoes for diced bell pepper or mushrooms. Leftovers keep refrigerated for one day; reheat the toast gently. Serve with a sharp green salad or pickled vegetables on the side to cut through the richness.
