Hummus and roasted vegetable bowl

Sabra hummus turns into dinner when you pair it with roasted vegetables from the pantry, a handful of herbs if you have them, and warm bread to scoop. This is the shelf working overtime with what it has.

Serves 2. 25 minutes, 10 at the stove.

  • 8 ounces baby carrots or celery
  • 1 package pita bread

  • 1 container Sea salt & cracked pepper hummus (Sabra)

  • 3 tablespoons olive oil
  • 2 cloves garlic

  1. Heat your oven to 425°F [220°C]. Toss 8 ounces of baby carrots or cut celery with 2 tablespoons of olive oil, a pinch of salt, and a crack of pepper. Spread on a sheet pan and roast until tender and caramelized, about 15 minutes; stir halfway.
  2. While vegetables roast, mince 2 cloves of garlic and warm them in a small bowl with 1 tablespoon of olive oil until fragrant, then stir into the hummus. Taste and adjust salt and pepper.
  3. Wrap pita bread in foil and warm it in the oven for the last 3 minutes of roasting. Spoon the hummus into two shallow bowls, top with the roasted vegetables, and serve with warm pita for scooping.

Note Swap the vegetables for raw ones if roasting takes too long. Leftover hummus keeps covered in the fridge for a week; stir in fresh lemon juice to brighten it. Add a simple green salad alongside to stretch the meal further.
