Colby-jack cheese sticks, fried and served hot

Halloumi has a high melting point, but colby-jack cheese sticks fry just as well for a quick supper. These stay creamy inside while crisping outside, ready to dip in whatever you have. Weeknight comfort in ten minutes.

  • 1/4 cup flour
  • 1 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons oil

  1. Pat 8 ounces of cheese sticks dry on a clean towel. Set three shallow bowls ready: one with 1/4 cup flour mixed with 1/2 teaspoon salt and 1/4 teaspoon pepper, one with 1 beaten egg, and one with 1/2 cup panko breadcrumbs.
  2. Roll each cheese stick in the flour, shaking off excess, then dip in egg, then roll in panko until fully coated. Lay on a plate while you heat 2 tablespoons of oil in a medium skillet over medium-high heat until the oil shimmers, about 2 minutes.
  3. Fry the breaded cheese sticks in the hot oil, turning once, until golden all over, about 4 minutes total. The cheese inside will soften but stay contained by the crust; listen for a light sizzle as your cue to turn.
  4. Transfer to a plate and let cool for 2 minutes before eating, so the cheese sets enough not to burn your mouth.

Note Swap the colby-jack for fresh mozzarella sticks if you find them. Leftover fried cheese keeps in a sealed container in the refrigerator for up to two days and reheats well in a 350°F [175°C] oven for five minutes. Serve with marinara sauce, ketchup, honey, or hot sauce for dipping, alongside a salad or roasted vegetables.
