Grilled tilapia with cracked pepper

These seasoned tilapia fillets come mostly cooked and need only minutes to warm through and crisp the edges. The cracked peppercorn crust adds textural contrast to the tender fish. Tonight you have a hot plate dinner without the fuss.

  • 8 ounces (about 2 fillets) tilapia
  • 1/2 teaspoon cracked peppercorn

  • 1 tablespoon oil
  • pinch salt

  1. Heat 1 tablespoon oil in a skillet over medium-high heat until the surface shimmers. Pat the 2 tilapia fillets dry with a paper towel and season each with a pinch of salt and 1/4 teaspoon cracked peppercorn on both sides.
  2. Set the fillets skin-side down in the hot pan and cook for 2 to 3 minutes, until the edges turn opaque and the skin releases easily from the pan.
  3. Flip the fillets gently and cook for another minute to warm through. The fish is ready when it flakes with a fork at the thickest part.

Note Swap the cracked peppercorn for any whole spice you have if you prefer. Leftovers keep refrigerated for two days and eat cold with lemon. Serve with rice or a green salad to stretch the meal.
