Spaghetti and Meatballs, Reheated

When the shelf offers a complete dinner from a jar, the cook's job is to let it shine. This is a quick reheat and serve, built for a tired night when the meatballs and sauce do the work.

Serves 2. 15 minutes, 5 at the stove.

  • 1 jar italian-style spaghetti & meatballs (Signature Cafe)

Staples

  • for pasta water salt
  • 1 teaspoon oil

  1. Bring a pot of salted water to a rolling boil over high heat, about 2 quarts. Set the timer for a full boil.
  2. While the water heats, empty the jar of spaghetti and meatballs into a skillet and set it over medium heat. Stir once or twice. Warm through until bubbles appear at the edges, about 5 minutes, stirring occasionally while the pasta water boils.
  3. When the water reaches a boil, drop in 3 ounces of fresh spaghetti or, lacking that, dried spaghetti broken in half. Stir immediately and return to a boil. Follow the package time, then taste a strand at 1 minute before the timer runs out.
  4. When the pasta is tender, scoop 1/2 cup pasta water into the warm sauce. Drain the pasta and toss it into the skillet with 1 teaspoon oil. Stir over low heat until the pasta is coated and the sauce clings to the strands, about 1 minute.
  5. Divide between two bowls and serve at once.

Note To swap, use fresh fettuccine or pappardelle if spaghetti is out. Leftovers keep three days; reheat gently with a splash of water. Serve with crusty bread and a green salad to stretch the meal.
