Pan-crisped lacinato kale with garlic

This is what to make when a bag of tender lacinato kale needs to go straight to the table. Crisp it fast in a hot pan with garlic and a squeeze of acid, and you have a vegetable that eats like dinner, not a side dish.

  • 1 bag (about 5 ounces) lacinato tuscan kale cut super greens, lacinato tuscan

  • 3 tablespoons oil
  • 3 cloves, thinly sliced garlic
  • to taste salt
  • to taste pepper

  1. Heat 3 tablespoons oil in a large skillet over medium-high heat. Add 3 thinly sliced garlic cloves and cook, stirring often, until fragrant and just turning golden at the edges, about 1 minute. Watch the garlic closely so it does not burn.
  2. Add the entire bag of lacinato kale to the pan and toss well to coat with the oil and garlic. The kale will wilt and reduce in volume quickly; keep tossing so it crisps evenly without sticking, about 4 to 5 minutes, until the leaves are tender and the edges are charred in spots.
  3. Taste and season generously with salt and pepper. Squeeze the juice of half a lemon over the kale, toss once, and transfer to a serving plate. Add more lemon juice if you like. Serve warm.

Note Swap spinach or arugula for the kale; cook spinach for 2 minutes, arugula for 1. Leftovers keep three days in the fridge and are good cold in a grain bowl or warm with a fried egg on top. Serve with roasted chicken, fish, or rice to make it a full meal.
