Tuna salad sandwiches on toasted bread

This ready-made tuna salad comes dressed and ready to eat, so all you do is toast the bread and build the sandwich. It's the kind of reliable weeknight dinner that tastes fresher than it should for how little work it takes.

Serves 2. 10 minutes, 5 at the stove.

  • 4 slices bread
  • a small handful lettuce

  • 1 can albacore ready-to-eat tuna salad

Staples

  • 1 tablespoon butter
  • to taste salt
  • to taste pepper

  1. Heat a skillet over medium heat. Butter 4 slices of bread on one side and lay them butter-side down in the pan until golden and crisp, about 2 minutes per side, then set them aside to cool slightly.
  2. Open the can of tuna salad and spoon half onto 2 of the toasted slices. Layer lettuce leaves over the tuna, then place the remaining toast on top.
  3. Cut the sandwiches in half, season with salt and pepper to taste, and serve at once.

Note Swap lettuce for sliced tomato if you have it. Wrap leftovers in foil and eat cold tomorrow. Serve with a glass of water and fruit or a handful of crackers on the side.
