Tuna salad sandwich with crisp lettuce

The tuna salad comes ready to eat from the jar, so you only assemble. Crisp lettuce and toasted bread round out the sandwich with texture and warmth, ready in minutes when you need it.

Serves 2. 8 minutes, 5 at the stove.

  • 4 leaves crisp lettuce

  • one 9 oz jar StarKist original deli style ready-to-eat tuna salad

Staples

  • 1 tablespoon butter
  • pinch salt

  1. Heat 1 tablespoon butter in a large skillet over medium-high heat. When foaming, lay 4 slices of bread flat in the pan and toast until golden, two to three minutes per side, then remove to a plate.
  2. Spread half the tuna salad from the jar on two warm toast slices and lay 2 crisp lettuce leaves on top of each, then cap with the remaining toast.
  3. Slice sandwiches in half across the diagonal and serve at once.

Note Swap the bread for crackers and lettuce for sliced tomato if you prefer an open-faced tuna platter. Leftovers keep in the refrigerator for one day. Serve with a cold drink and carrot sticks on the side to lengthen the meal.
