Avocado smash on toasted bread

This is guacamole already made, which means dinner is toast with toppings. A tired weeknight calls for what the shelf gives you, and here it does the heavy lifting so you just assemble and eat.

Serves 2. 10 minutes, 8 at the stove.

You need 1 container avocado smash, 1 tablespoon oil, to taste salt, to taste pepper, 1 loaf bread, 2 eggs.

  1. Toast 2 slices of bread until the edges brown. While they toast, heat 1 tablespoon oil in a small skillet over medium heat.
  2. Crack 2 eggs into the hot oil and cook until the whites set, about 3 minutes, letting the yolks stay soft.
  3. Spread the container of avocado smash across the toast, divide it between the two slices, and top each with one fried egg. Season with salt and pepper to taste and serve at once.

Note Swap the eggs for sliced tomato and a squeeze of fresh lemon if you prefer. Leftovers don't keep well, so eat immediately. Serve with a simple green salad or hot sauce on the side.
