Mango yogurt parfait with granola and berries

This shelf holds a ready-made parfait that needs only fresh berries to become dinner. When time is short and appetite light, a tart-sweet bowl dressed with a bit of acid and fresh fruit makes sense. Assemble it cold and eat it in five minutes flat.

  1. Divide the mango yogurt parfait between two bowls, distributing the yogurt, mango, and granola evenly.
  2. Scatter a handful of fresh berries over each bowl and add a pinch of salt to each.
  3. Serve at once while the granola is still crisp.

Note Swap berries for other fresh fruit if raspberries cost too much, or use frozen berries thawed and drained. Keeps in the fridge for one day. Serve as written, or with a spoon and a glass of cold milk alongside.
