Blueberry yogurt fool with shortbread crumble

A fool is a light, barely-sweet yogurt cream that lets fruit do the work. With Greek yogurt from the shelf and shortbread crumbs from your pantry, this is the kind of thing you make when you are tired and want something that tastes finished without much effort.

Serves 2. 20 minutes, 15 at the stove.

  • 32 oz Oregon blueberry Greek lowfat yogurt, Oregon blueberry (Tillamook)

  • 3 tablespoons butter
  • 1/2 cup [60 grams] flour
  • 2 tablespoons sugar
  • pinch salt

  1. Melt 3 tablespoons butter in a small skillet over medium heat, then stir in 1/2 cup flour, 2 tablespoons sugar, and a pinch of salt until the mixture is sandy and clumped. Spread it on a sheet of foil on your counter to cool while you make the fool.
  2. Divide half the yogurt from the jar between two bowls or glasses. Spoon some of the blueberries and syrup from the yogurt over each serving, then divide the rest of the yogurt between the bowls and top each with more fruit and syrup.
  3. Break the cooled shortbread into rough crumbs with your fingers and scatter them over each fool. Serve at once.

Note Swap the shortbread crumble for granola if you have it. Leftovers keep in the fridge for two days; stir the crumble in just before eating so it stays crisp. Serve with strong coffee or tea.
